After 13 years, a Raleigh bakery is expanding to a second location in the Triangle.

Known for its dozens of muffin flavors and custom cakes, Groovy Duck Bakery is working to open a new store in the rapidly growing town of Apex.

The new space, around 1,700 square feet, is about the same size as the Raleigh location on Edwards Mill Road, co-owner JP Rivera told The News & Observer in a call.

Rivera and his wife, Laura, who purchased the business around three years ago, have been wanting to expand the bakery but needed to find the right place — somewhere with steady foot traffic, surrounded by other businesses, where they would feel comfortable signing a multi-year lease.

The space at 101 N. Salem St., most recently occupied by another bakery called The Cranky Yankee, needed a lot of work. But it’s the place the Riveras picked. It will join dessert businesses Kilwins, Fresh. Local Ice Cream and Common Grounds Coffeehouse & Desserts in downtown Apex.

“The town is very organized, and people are super friendly,” Rivera said.

Groovy Duck Bakery plans new location in Apex

In Apex, the Riveras are “completely rehabbing the place,” working on floors, walls, water connections, electrical, ceilings and the kitchen.

When work is complete, and the business opens, customers can expect a similar experience to that of the Raleigh bakery. Indoor seating will be very limited, but later, with an expanded sidewalk, the Riveras are hoping to have tables and chairs outside. They’re also hoping to be more involved in events and collaborations in Apex, Rivera said.

Customers will be able to purchase coffee and baked goods such as muffins, scones and chunky cookies, or order a custom cake.

The Riveras kept the old recipes from the previous owners but added some new items such as Brazilian cheese balls, which nod to the current owners’ South American origins.

Groovy Duck Bakery, expected to open in Apex in April or May, depending on construction, uses high-quality ingredients and makes everything from scratch, Rivera said.

“You can still have that kind of quality without paying so much money — like grandma’s recipe,” he said.
