Sometimes you get home at night and you’re so hungry you don’t even want to take the time to order out. And there’s no need to, thanks to this delicious and tangy tri-color pasta salad recipe. This dish is so easy, you can make it in just 20 minutes. And best of all, it’s as hearty as it is yummy. All you have to do is cook the pasta and combine it with cherry tomatoes, cubed ham, scallions, peas and peppers, then toss the mixture in a quick homemade vinaigrette brightened with fresh lemon and given a zingy pop with Dijon mustard. The different flavors blend beautifully when you combine them. And you can feel good knowing that you’re getting a healthy dose of veggies along with the deliciousness!

Ingredients

  • 1 lemon
  • 1/4 cup olive oil
  • 2 Tbs. flaxseed oil
  • 1 tsp. Dijon mustard
  • 16 oz. fusilli pasta
  • Cherry tomatoes, cubed ham, diced pepper, peas, sliced scallions

Instructions

Grate 1/2 tsp. zest and squeeze 1 Tbs. juice from lemon. In large bowl, combine zest and juice with both oils, Dijon mustard and 1/4 tsp. salt; reserve.

Cook pasta according to package instructions; drain. Add to reserved bowl with cherry tomatoes, ham, bell pepper, peas and scallions; toss to combine.
