Dried chicken residue on knives stored as clean: Restaurant sanitation scores (Dec. 10)

The News & Observer publishes a weekly roundup of restaurant sanitation scores to keep you up-to-date on the health grades at Triangle dining spots.

Sanitation scores and their corresponding letter grades are used in North Carolina to assess restaurants’ adherence to rules and standards intended to mitigate and prevent the spread of food-borne illnesses.

You’ve likely seen sanitation grade cards at restaurants you’ve visited, and The N&O previously explained what those scores mean and how they’re calculated.

Here are sanitation scores in Triangle counties for the week of Dec. 3-9.

Wake County sanitation scores

The Wake County inspection management system shows that 99 restaurant inspections were completed Dec. 3-9.

  • Most restaurants received an A grade, or a score of at least 90%.

  • One restaurant received a B grade, or a score of at least 80% but lower than 90%.

Shanghai Alley (1148 Kildaire Farm Rd. in Cary) received a score of 88% during an inspection on Monday, Dec. 9.

  • The restaurant was in violation of 10 standards.

  • Violations included knives stored on the magnetic strip above the prep table with dried chicken residue on them, prompting the inspector to remind the restaurant to “clean and sanitize knives in between uses.” There were also open packages of rice, salt and nuts stored in the dry storage room with no protection from dust or insects.

  • Some violations were corrected during the inspection.

  • The restaurant previously scored 90% and 85.5% in July.

Durham County sanitation scores

The Durham County inspection management system shows 29 restaurant inspections were completed Dec. 3-9.

  • Most restaurants received an A grade.

  • Two restaurants received a B grade.

Chopstix Chinese (2000 Avondale Dr Suite B in Durham) received a score of 83% during an inspection on Thursday, Dec. 5.

  • The restaurant was in violation of 15 standards.

  • Violations included numerous plastic grocery bags being used as food storage bags in the walk-in cooler, plus numerous buckets of chicken wings and a pan of raw shrimp on the cooler’s floor.

  • Some violations were corrected during the inspection.

  • The restaurant previously scored 79% in November and 95% in August.

El Corral Mexican Restaurant (1821 Hillandale Rd. in Durham) received a score of 88.5% during an inspection on Monday, Dec. 9.

  • The restaurant was in violation of 14 standards.

  • Violations included multiple foods in the walk-in cooler as much as six degrees warmer than necessary temperature.

  • Some violations were corrected during the inspection.

  • The restaurant previously scored 95% in July and 94% in November 2023.

Orange County sanitation scores

The Orange County inspection management system shows that 13 restaurant inspections were completed Dec. 3-9.

  • Most restaurants received an A grade.

  • One restaurant received a B grade.

Jay’s Chicken Shack (646 N Churton St. in Hillsborough) received a score of 87% during an inspection on Thursday, Dec. 5.

  • The restaurant was in violation of 16 standards.

  • Violations included raw eggs and raw hamburgers stored above potatoes, fish and ready-to-eat foods in the freezer and cooler.

  • Some violations were corrected during the inspection.

  • The restaurant previously scored 92% in April and 91.5% in October 2023.

Johnston County sanitation scores

The Johnston County inspection management system shows that 21 restaurant inspections were completed Dec. 3-9.

  • All restaurants received an A grade.

The Chatham County inspections management system shows that 10 restaurant inspections were completed Dec. 3-9.
