Dairy wants to expand cheese options

Prodigal Farm eyes expansion: The owners of the goat cheese farm Prodigal Farm are launching an online campaign to raise money for an expansion.

They hope to raise $45,000 to build an addition to their existing dairy where they can age hard cheeses.

They want to make goat blue cheeses, as well as “mixed-milk” cheeses made from the milk of goats as well as cows.

By adding cows to their farm, they hope to be able to create more work opportunities for young farmers.

They hope that they can make the hard cheeses that will keep for months and will be ready for wholesale orders in the fall. Most of their milk is made in the summer, but wholesale cheese orders decrease then.

Farm co-owner Kathryn Spann said in an email that she’s hoping to have the campaign live online by Sunday. At the end of the 45-day campaign on April 13, they plan to hold an open farm day.

Which Wich opens: Which Wich Superior Sandwiches is opening on Monday in downtown Durham near the Durham Bulls Athletic Park.

The eatery is one of the new restaurants in the Diamond View III building near the ballpark, and across from American Tobacco.

The store is open from 10 a.m. to 10 p.m. Monday to Saturday, and from 11 a.m. to 8 p.m. Sunday.

The restaurant has a range of customizable sandwiches from the signature “Wicked” sandwich that has five meats and a choice of three cheeses, to the “Thank You Turkey” that has stuffing and cranberry options.

Customers use pens to mark up pre-printed menus on sandwich bags choosing their own type of bread, cheese, spreads and toppings. There are also shakes, chips, and cookies.

Little Caesers opens in gas station: Little Caesers pizza shops will be opening in Kangaroo Express gas stations around the Southeast, and there’s one already in Durham.

The restaurant is in a gas station at 3406 N.C. 70 East in Durham. Kangaroo Express convenience stores are operated by The Pantry Inc.

Dunkin’ Donuts free iced coffee: Dunkin’ Donuts is giving out free, 16-ounce iced coffee drinks all day Monday.

The drinks will be available in the original flavor as well as French vanilla, hazelnut, toasted almond, blueberry, coconut, cinnamon, caramel, and raspberry.

Zaxby’s opening Monday: The new Zaxby’s on Hillsborough Road is targeted to open Monday, according to a spokeswoman.

It opened in the space previously occupied by Bergama, a Turkish and Mediterranean restaurant.
