Editor's note: This item originally said Friday, based on information from the company, but Chipotle has since provided updated information that the opening has been moved to January.

Chipotle to open next month: Chipotle Mexican Grill is slated to open Friday in the new Gateway Terrace development off U.S. 15-501.

The restaurant is at 3219 Watkins Road in the development, which is across U.S. 15-501 from New Hope Commons.

In addition to the Chipotle, the development is also slated to get a Freddy’s Frozen Custard & Steakburgers restaurant, a PDQ fried chicken tenders eatery, and a Jimmy John’s.

The Chipotle will serve burritos, bowls, tacos and salads, house-made salsas, rBGH-free dairy and made-from-scratch guacamole.

It will be open through Jan. 5. It’s in Suite 516 across from The Food Gallery.

Ponysaurus Brewing Co. in business: The new Durham brewing operation, Ponysaurus Brewing Co., is now in business, selling beer at Watts Grocery, Geer Street Garden, and starting Tuesday, at Mateo.

Keil Jansen, the brew master with Ponysaurus, is brewing out of The Cookery, the commercial kitchen that functions as home-base for many food entrepreneurs at 1101 W. Chapel Hill St.

He’s selling kegs to local bars and restaurants that are delivered in a wheelchair-accessible school bus. Previously, Jansen worked as a special education teacher at the Central Park School for Children in Durham.

“Because we don’t have our own taproom, we’re releasing beers at different restaurants around town,” Jansen said. “Things are ramping up kind of one notch at a time, which is a great way to do it,” he added.
